Victoria Lynn "Vicki" Gaynor

December 14, 1963 - May 9, 2023

It is with deep sadness we announce the passing of Victoria (Vicki) Lynn Gaynor on the evening of May 9, 2023 at age 59. Vicki was born at the Lindsay Hospital and lived in Fenelon Falls in 1963. At the age of 5 years, she moved to northern B.C. until age 10 when she returned to Fenelon Falls as a result of her father’s accidental death. With schooling completed and a diploma in fashion design, she headed west again to settle in Red Deer Alberta. During her first year, she found a new desire and changed her vocation to food preparation. She was employed at a couple of prestigious hotels and received her secondary ticket for chef diploma. She reached the position of lead line chef at the largest Elk’s Club of Canada in Red Deer, Alberta.

She missed the red maples of Ontario and felt her inner calling to return home at age 26 to Lindsay where she was in charge of the bakery at De Kokers. That started her real desire to become a specialist in pastry. She spent two years learning pastry production techniques.

During a simple visit to her sister’s workplace in Peterborough, she was introduced to a customer who would become her future husband/partner for the rest of her life (Richard Meredith, Denturist in Peterborough). The eventual outcome for them was moving to Cobourg in the fall of 1993 and remain there to the present.

Victoria started her business as “Victoria’s Pastry” and sold all of her fabulous pastries at the Cobourg Farmer’s Market. She loved pastry with all its unique possibilities. Her pies, tarts, tea biscuits, and later sausage rolls, were all the hit of many Cobourg area family dinners.
Her love of life, husband, travel, good food, home life and contemporary gospel music on UCB Canada, were the headlines in her life. Favourite travel haunts included Charlevoix Region in Quebec, Key West and walking on the beaches of Sanibel Island, Florida, picking her shells.

Lastly, but most importantly, Victoria and Richard were both Christians and never shied away from sharing their wonderful love and faith in God.
Victoria has been dearly loved and cherished by her husband, Richard.
Victoria has a sister, Mary Gentile (Tony) and family in Belleville. Two step-sisters in Fenelon Falls, Debbie Norris (Glen), Susan Webster (Jim).

Victoria will be dearly missed by sisters in law Rhoda Wright (Craig) and family, and Susan Porteous (Alan) of Peterborough, and her sister-in-law Joanne Meredith (late Tom).
A visitation will be held at MacCoubrey Funeral Home 30 King St. E., Cobourg on Monday May 15, 2023 from 6 to 9 pm. Memorial donations may be made to Cornerstone Family Violence Prevention Centre, or a charity of your choice.
