Carol Grace Davies (nee Collins) passed peacefully in the late afternoon of Monday, February 16th, at the age of 83. She was surrounded by her family, and departed peacefully from her lovely room at Ed's House. Carol is predeceased by her husband Joe, and survived by her three children, Lori Copeland (Nathan); Lisa Miller (Kevin), and Joey Davies (Jenna Holmes). Carol had six grandchildren, Jennifer (Johan), Ashley (Patrick), Daina (Andreas), Tyler (Olie), Zak (Miranda), and Aibhlinn; and nine great grandchildren, Penelope, Evangeline, Catherine, Parker, Liam, Max, Zoe, Sage and Valerie. She was also survived by her sister Sharon Newdick from New Brunswick, and her brother Marc from London, Ontario. Carol was loved by many, and was known for her cheerful attitude and positive outlook. She lived life to fullest, and enjoyed many wonderful travel experiences and adventures. She was also known as an incredibly skilled baker, particularly famous for her pastry. She baked for many friends and family, including for The Pastry Shoppe at the Cobourg Farmers Market with her daughter Lisa; and for her grandson Zak at PREP, producing Grandma Carol's Butter Tarts. Carol had been residing at Legion Village for the last several years, and was an active part of the Legion and the Ladies Auxiliary. The Legion and her friends provided a great sense of community. We would like to express our gratitude for the exceptional care and support Carol received at Ed's House Hospice. A Celebration of Life to honor Carol will be held at the Cobourg Legion at a later date.
I’ve been very upset on losing my friend Carol. She lived with me for a year and we had so much fun. She loved all my dogs, looked after them like her own. I was up to date on her illness. Till she went to Ed’s I will remember her in our good times together. Sending my condolences to all of her family. She talked about all of you and loved you so much. Lori so sorry to hear about your mom, my condolences to you Lisa and Joey. Carol and I have been friends since my husband and I boated at their marina. We kept in touch all these years so I will miss her very much. A friend of mine from the Legion let me know she had passed. They sure will miss her baking. She was a lovely caring person and will be missed.

Omygoodness..Carol was the bestest cousin...friend..and supporter...I could discuss anything with Carol and she would always change a negative to a positive. Carol's laugh was infectious!!!! From hiding poppycock that we would laughingly indulge in...to many many many occasions that our laughter would last forever. I loved Carol...so many great memories!!!!!! You need to write a book to tell everything! Carol you will be greatly missed! A big chapter has closed! Her beautiful family will carry on her love and laughter!

It is so very sad to hear of Carol’s passing. She truly celebrated life each day and had a remarkable way of making everyone feel welcomed, and embraced. I feel deeply grateful to have known her and to have shared so many lovely moments in her company at family gatherings and on numerous occasions over the years. Her warmth and spirit will be remembered with great affection.

Please accept my condolences and the passing of Carol. I worked with Carol at Legion Village then she became a tenant. Carol had the most beautiful personality and so willing to help anyone. The butter tarts......are whole other story.....THE BEST!!!!! Carol I will miss talking to you at the Village everyday and seeing that smiling face. You were always so optimistic and fun to be around. I'm going to miss you.

My sincere condolences to the entire family. Carol was a fine lady to have quick chats and laughs with. As a former neighbor, she would regularly fill our halls with the sweet smells of her baked creations. She was always such a jocular person and will be missed.
So very sorry for your loss. I worked with Carol doing pub lunches at the old Cobourg Legion and had so much fun! She loved animals and looked after my dog while I was on holidays out of province. She was always so accommodating to everyone and was well liked! May she rip and your many memories help you during the difficult days ahead.
Carol was a wonderful lady so willing to do for others. She will be missed by all and she did so much for the ladies auxiliary. Her last year of Friday night darts we were on the same team and she made it enjoyable for all of us. RIP

What a fantastic description of your beautiful Mom, Grandma, great grandma. She had a personality that shone and an even friendlier smile that won people over. Met your Mom over 60 years ago babysitting you kids, she moved away and we reconnected again in Gores Landing years later. She was one in a million. Sending you all heartfelt condolences.
